Varenyky

Varenyky are a type of Ukrainian dumplings that are usually filled with potatoes, cheese, or meat. Here's a recipe to make warenyky with potato filling:


Ingredients:


           Dough:


  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 1 large egg
  • 1 tablespoon vegetable oil

    Potato filling:


  • 4 medium potatoes, peeled and cubed
  • 1 medium onion, chopped
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste

Instructions:


  1. To make the dough, mix the flour and salt in a large bowl. Make a well in the center of the flour mixture and add the warm water, egg, and vegetable oil. Mix until the dough forms, then knead it on a floured surface until it's smooth and elastic. Cover the dough with a clean towel and let it rest for about 30 minutes.

  2. To make the filling, boil the potatoes until they are soft, then drain and mash them. In a separate pan, sauté the chopped onion in butter until it's soft and translucent. Add the sautéed onion to the mashed potatoes and mix well. Season with salt and pepper to taste.

  3. Divide the dough into two pieces and roll each one out to about 1/8 inch thickness. Use a round cookie cutter or glass to cut circles from the dough, about 3 inches in diameter.

  4. Place a spoonful of the potato filling in the center of each circle, then fold the dough over the filling to form a half-moon shape. Pinch the edges of the dough together to seal the filling inside.

  5. Bring a large pot of salted water to a boil. Carefully drop the dumplings into the water and cook for about 5-7 minutes, or until they float to the surface. Use a slotted spoon to remove the cooked warenyky from the pot and transfer them to a serving dish.

  6. Serve the warenyky hot, topped with sour cream, chopped chives, and/or fried onions.
