Udon

Udon is a type of thick, chewy Japanese noodle made from wheat flour, salt, and water. It's commonly used in soups and stir-fry dishes. Here is a recipe for cooking udon noodles:


Ingredients:


  • 8 oz udon noodles
  • 4 cups water
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (sweet rice wine)
  • 1 tablespoon sake (Japanese rice wine)
  • 1 tablespoon sugar
  • 1/2 cup sliced scallions
  • 1 cup sliced shiitake mushrooms
  • 1 cup sliced bok choy
  • 1 tablespoon vegetable oil

Instructions:


  1. Bring a pot of water to a boil. Add the udon noodles and cook for 8-10 minutes, or until tender.

  2. Drain the noodles and rinse them under cold water. Set aside.

  3. In a small bowl, whisk together the soy sauce, mirin, sake, and sugar. Set aside.

  4. In a large wok or skillet, heat the vegetable oil over high heat. Add the scallions, shiitake mushrooms, and bok choy, and stir-fry for 2-3 minutes, or until the vegetables are tender.

  5. Add the udon noodles to the pan and stir-fry for an additional 1-2 minutes.

  6. Pour the sauce over the noodles and vegetables, and stir to coat everything evenly.

  7. Serve hot, garnished with additional scallions, if desired.
