Tom Yum is a hot and sour Thai soup that is often made with shrimp (Tom Yam Goong) or chicken (Tom Yam Gai). Here's a recipe for Tom Yam Goong:
Ingredients:
- 1 lb. large shrimp, peeled and deveined
- 4 cups chicken or vegetable broth
- 2-3 stalks of lemongrass, bruised and chopped into 2-inch pieces
- 4-5 kaffir lime leaves, torn into pieces
- 2-3 small red chilies, chopped
- 1 tablespoon galangal, thinly sliced
- 3-4 cloves of garlic, minced
- 2-3 tablespoons fish sauce
- 1 tablespoon palm sugar or brown sugar
- 1/4 cup lime juice
- 1/4 cup cilantro leaves, chopped
- Salt to taste
Instructions:
- In a large pot, bring the chicken or vegetable broth to a boil. Add the lemongrass, kaffir lime leaves, red chilies, galangal, and garlic. Reduce the heat to medium-low and simmer for 10-15 minutes to infuse the broth with the flavors of the aromatics.
- Add the peeled and deveined shrimp to the pot and simmer for 2-3 minutes or until the shrimp are cooked through.
- Season the soup with fish sauce, palm sugar, and lime juice. Stir to combine and adjust the seasoning to taste.
- Serve hot, garnished with cilantro leaves. Enjoy!
Note: Tom Yam can be served with steamed rice or noodles. You can also add other vegetables or herbs to the soup, such as mushrooms, tomatoes, or Thai basil.
