Ingredients:
For the cake:
- 6 eggs, separated
- 1 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
For the buttercream:
- 1 cup unsalted butter, at room temperature
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
For the glaze:
- 4 oz dark chocolate, chopped
- 1/4 cup heavy cream
- 2 tablespoons unsalted butter
Instructions:
- Preheat the oven to 350°F (180°C). Grease two 9-inch cake pans and line the bottom with parchment paper.
- In a large mixing bowl, beat the egg yolks with the sugar until light and fluffy. Add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour and baking powder. Gradually add the flour mixture to the egg yolk mixture, stirring until well combined.
- In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites gently into the cake batter.
- Divide the batter evenly between the two prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Let the cakes cool in the pans for 5 minutes, then transfer them to wire racks to cool completely.
- While the cakes are cooling, prepare the buttercream. In a mixing bowl, beat the butter until light and fluffy. Gradually add the powdered sugar, milk, and vanilla extract, mixing well after each addition.
- Once the cakes are cool, spread a layer of buttercream on top of one cake, then place the other cake on top. Spread the remaining buttercream on the top and sides of the cake.
- To make the glaze, melt the chocolate and butter in a heatproof bowl set over a pot of simmering water. Once melted, stir in the heavy cream until smooth.
- Pour the glaze over the top of the cake, letting it drip down the sides.
- Chill the cake for at least 30 minutes to set the glaze.
- Slice the cake and serve.
