Kyiv cake

Kyiv cake, also known as Kiev cake, is a traditional Ukrainian cake that is made of layers of sponge cake and buttercream, with a chocolate glaze on top. Here is a recipe for making Kyiv cake:


Ingredients:


For the cake:


  • 6 eggs, separated
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

For the buttercream:


  • 1 cup unsalted butter, at room temperature
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

For the glaze:


  • 4 oz dark chocolate, chopped
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter

Instructions:

  1. Preheat the oven to 350°F (180°C). Grease two 9-inch cake pans and line the bottom with parchment paper.

  2. In a large mixing bowl, beat the egg yolks with the sugar until light and fluffy. Add the vanilla extract and mix well.

  3. In a separate bowl, whisk together the flour and baking powder. Gradually add the flour mixture to the egg yolk mixture, stirring until well combined.

  4. In a separate bowl, beat the egg whites until stiff peaks form. Fold the egg whites gently into the cake batter.

  5. Divide the batter evenly between the two prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  6. Let the cakes cool in the pans for 5 minutes, then transfer them to wire racks to cool completely.

  7. While the cakes are cooling, prepare the buttercream. In a mixing bowl, beat the butter until light and fluffy. Gradually add the powdered sugar, milk, and vanilla extract, mixing well after each addition.

  8. Once the cakes are cool, spread a layer of buttercream on top of one cake, then place the other cake on top. Spread the remaining buttercream on the top and sides of the cake.

  9. To make the glaze, melt the chocolate and butter in a heatproof bowl set over a pot of simmering water. Once melted, stir in the heavy cream until smooth.

  10. Pour the glaze over the top of the cake, letting it drip down the sides.

  11. Chill the cake for at least 30 minutes to set the glaze.

  12. Slice the cake and serve.
