Borsch

Borshch is a traditional soup from Ukraine that is usually made with beets, cabbage, potatoes, carrots, onions, garlic, and meat (such as beef or pork). Here's a recipe for Ukrainian Borscht:


Ingredients:


  • 1 lb. beef or pork (bone-in preferred)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2-3 medium beets, peeled and shredded
  • 2-3 carrots, peeled and shredded
  • 1 small head of cabbage, chopped
  • 3-4 potatoes, peeled and cubed
  • 1 can of diced tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 2-3 tablespoons vegetable oil
  • 2-3 tablespoons white vinegar
  • Salt and black pepper to taste
  • Sour cream and fresh dill, for serving

Instructions:


  1. In a large pot, add the beef or pork and enough water to cover it. Bring to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the meat is tender. Remove the meat from the pot and set it aside to cool.

  2. In the same pot, add the chopped onion, minced garlic, shredded beets, and shredded carrots. Cook for 5-7 minutes or until the vegetables start to soften.

  3. Add the chopped cabbage, cubed potatoes, diced tomatoes, tomato paste, bay leaf, and enough water to cover the vegetables. Bring to a boil, then reduce the heat to low and simmer for 20-30 minutes or until the vegetables are cooked through.

  4. Once the meat has cooled, remove the bones and chop the meat into small pieces. Add the chopped meat to the pot.

  5. Add the vegetable oil and white vinegar to the pot and stir to combine. Season with salt and black pepper to taste.

  6. Serve hot, topped with a dollop of sour cream and fresh dill. Enjoy!


Note: Borscht is often served with a side of dark rye bread.
