Borshch is a traditional soup from Ukraine that is usually made with beets, cabbage, potatoes, carrots, onions, garlic, and meat (such as beef or pork). Here's a recipe for Ukrainian Borscht:
Ingredients:
- 1 lb. beef or pork (bone-in preferred)
- 1 onion, chopped
- 3 garlic cloves, minced
- 2-3 medium beets, peeled and shredded
- 2-3 carrots, peeled and shredded
- 1 small head of cabbage, chopped
- 3-4 potatoes, peeled and cubed
- 1 can of diced tomatoes
- 1 tablespoon tomato paste
- 1 bay leaf
- 2-3 tablespoons vegetable oil
- 2-3 tablespoons white vinegar
- Salt and black pepper to taste
- Sour cream and fresh dill, for serving
Instructions:
- In a large pot, add the beef or pork and enough water to cover it. Bring to a boil, then reduce the heat to low and simmer for 30-40 minutes or until the meat is tender. Remove the meat from the pot and set it aside to cool.
- In the same pot, add the chopped onion, minced garlic, shredded beets, and shredded carrots. Cook for 5-7 minutes or until the vegetables start to soften.
- Add the chopped cabbage, cubed potatoes, diced tomatoes, tomato paste, bay leaf, and enough water to cover the vegetables. Bring to a boil, then reduce the heat to low and simmer for 20-30 minutes or until the vegetables are cooked through.
- Once the meat has cooled, remove the bones and chop the meat into small pieces. Add the chopped meat to the pot.
- Add the vegetable oil and white vinegar to the pot and stir to combine. Season with salt and black pepper to taste.
- Serve hot, topped with a dollop of sour cream and fresh dill. Enjoy!
Note: Borscht is often served with a side of dark rye bread.
